Handpicked at a riper 14 Be, this Shiraz is heavily fruit forward and complex. Crushed, destemmed and chilled for a 2-day cold soak in open fermenters before inoculation. Once primary fermentation was almost complete, the wine was pressed off skins to finish fermentation in tank. The wine was racked into a mix of new, one year old and older oak, mainly hogshead format for secondary fermentation.
