The fruit was hand-picked in early February, following another premium growing season. Grape bins were tipped directly into an open fermenter for a 25% whole-bunch fermentation, proceeding with a 2-day cold soak. Wild fermentation followed by a later inoculation to complete primary, pressed into tank and inoculated for secondary fermentation.
