Picked as ripe as possible at roughly 14-15 Baumé before the birds come visiting. Crushed, destemmed and pressed to cold settle in tank, before being inoculated with a weak yeast strain. Ferment is stopped at approximately 5 Baumé by chilling the wine and adding a brandy spirit to fortify. The tank is then filtered and transferred to old Madeira barrels for maturation for many years to come. This wine is a new ‘solera’ blend of many past vintages to continue to keep our estate style consistent and continue the heritage of our fortified.
