This elegant 100% Shiraz was crafted from our own Top Vineyard Shiraz, situated on the top of our hill at the Estate. Handpicked at a riper 14 Be, this Shiraz is heavily fruit forward and complex. Crushed, destemmed and chilled for a 2-day cold soak in open fermenters before inoculation. Once primary fermentation was almost complete, the wine was pressed off skins to finish fermentation in tank. The wine was racked into a mix of new, one year old and older oak, mainly hogshead format for secondary fermentation. After a rack and return once malolactic was completed, the wine matured in oak for 9 months, 40% new French oak.
